Fanned-Roasted Potatoes

Peel potatoes and slice 1/4-inch without cutting through the other side. Place in bowl of cold water. Spray an 11 x 7-inch baking pan with Pam.
Place potatoes in pan, cut side up.
Brush with margarine.
Sprinkle with salt, pepper and Italian seasoning. One hour before serving, bake at 325° for 40 minutes. Baste with margarine. Increase temperature to 450° and bake 20 minutes more, testing for doneness.
Garnish with parsley (optional).
