Don's Potato Dumplings

Peel potatoes and boil until tender.
Drain and mash or force through a sieve to rice.
Beat eggs in a large bowl; add remaining ingredients.
Turn out on floured cloth or board and knead slightly flour.
Into logs and slice into 2-inch pieces form into individual balls.
Drop dumpling balls into a large kettle of boiling salt water.
Cover and watch for the dumplings to rise. After they rise, cook about 5 minutes. Remove a dumpling half to check doneness.
If done, they will appear dry and light throughout. If wet and spongy, cook a while longer.
