Cream of Broccoli Soup
Cream Of Broccoli Soup is an moderately easy dinner. Made with 2 boxes frozen, chopped broccoli, 2 tbsp. minced onion, 2 stalks celery, chopped fine, 1/4 c. margarine and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook and then purΓ©e broccoli in a food processor.
Saute onion and celery in margarine until transparent. Blend in flour until smooth.
Add broth.
Cook, stirring until slightly thickened. Stir in broccoli, half and half, milk and salt.
Heat thoroughly. I usually double the recipe! I also mix cornstarch and water and add to soup at the end because I like it thicker!
