Cracker Ice Box Cookies
Cracker Ice Box Cookies is an moderately easy dinner. Made with 2 sticks margarine, 1 c. sugar, 1 egg, beaten, 1/2 c. evaporated milk and 1 c. graham cracker crumbs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Melt margarine and add sugar, milk and egg.
Cook until thick, stirring constantly.
Remove from heat and add graham cracker crumbs, nuts and coconut.
Line a 9x13 inch pan with whole graham crackers.
Spread the cooked mixture over the crackers.
Add another layer of graham crackers.
Make frosting; mix confectioners sugar, milk and vanilla.
Spread this over final layer of graham crackers.
Chill in refrigerator about 3 hours before cutting. (A ready to spread frosting may be used.)
