Cowboy Coffee Cake
Cowboy Coffee Cake is an moderately easy dinner. Made with 2 1/2 c. flour, 1/2 tsp. salt, 2 c. brown sugar, 2/3 c. shortening and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine flour, salt, sugar and shortening.
Mix until crumbly. Reserve 1/2 cup mixture.
To remaining crumbs, add baking powder, soda and spices.
Mix thoroughly.
Add milk and eggs; mix well. Pour into 2 waxed paper lined 8 x 8 x 2-inch pans. Sprinkle with reserved crumbs.
Chopped nuts and cinnamon may be sprinkled over crumbs.
Bake at 375Β° for 25 to 30 minutes.
