With electric mixer at low speed, blend gingerbread mix, mincemeat and egg.
Increase speed and beat 1 minute.
Pour batter into a lightly greased 15 x 10 x 1-inch jelly roll pan.
Spread mixture evenly.
Bake in preheated oven at 350Β° for 20 to 25 minutes or until cake springs back when lightly pressed with fingers.
Let cake cool completely in pan or wire rack.
