Chimichangas(Leftover Meal) is an moderately easy dinner. Made with 1 1/2 c. leftover meat (pork, chicken, steak or even hamburger), 1 medium onion, chopped, 1 (8 oz.) can enchilada sauce or tomato sauce, 4 large flour tortillas and 1/2-inch hot oil in skillet, this recipe delivers authentic, satisfying flavors. In skillet, heat 1 tablespoon oil.
Add onions.
Cook until clear.
Add meat, olives, enchilada sauce and hot peppers to taste.
Divide mixture among the flour tortillas.
