Chili Rellenos Casserole
Chili Rellenos Casserole is an moderately easy dinner. Made with 1 (7 oz.) can whole green chilies, 2 (8 oz.) c. shredded monterey jack cheese, 2 (8 oz.) c. shredded cheddar cheese, 3 eggs and 3 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Split chilies; rinse and remove seeds.
Dry on paper towels. Arrange chilies on bottom of 11 x 7 x 1 1/2-inch baking dish (or 9 x 9-inch pan).
Top with cheeses.
In bowl, beat eggs; add milk and biscuit mix.
Blend well; pour over cheese.
Sprinkle with salt.
Bake at 325Β° for 50 to 55 minutes or until golden brown. Serve with salsa.
