Chili Cocktail Pie is an easy dinner. Made with 2 small cans green chilies, chopped, 1 lb. sharp cheddar cheese (cracker barrel perhaps) and 6 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Layer chilies over bottom of an 8 or 9-inch square pan.
Grate cheese over chilies.
Beat eggs and pour over cheese.
