Chicken Pot Pie
Chicken Pot Pie is an moderately easy dinner. Made with 1 frying chicken, cut up and cooked until tender, 1 small onion, chopped, 1/2 c. sliced carrots, 1/2 c. sliced celery and 1 small can mushrooms, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove chicken from bones and arrange pieces in lightly greased casserole.
Saute onions in 1 tablespoon oil until clear, but not browned.
Add carrots, celery and 1/2 cup chicken broth (stock from cooking chicken).
Simmer for 5 minutes.
Add to casserole, then add the mushrooms (drained).
Dilute the cream of chicken soup with 1/2 can of broth.
Pour over meat and vegetables in casserole. Arrange biscuits on top.
Bake at 400Β° for 15 to 20 minutes, until biscuits are done.
