*Chicken Mandalay
*Chicken Mandalay is an impressive Indian dinner you can prepare in about 2 hours. Made with whole chicken breasts, c. butter or margarine, (10 1/2 oz.) can consomme, . curry powder and . instant minced onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cut chicken into chunks or slices.
In a large skillet, melt butter.
Saute chicken until golden brown; set aside.
Combine consomme, curry powder, onion, salt and pepper.
Pour over chicken. Cover and simmer for 45 minutes.
Drain oranges, reserving syrup. Combine syrup, lemon juice and cornstarch.
Cook, stirring, until thickened and clear.
Add dates and green pepper; simmer for 3 to 4 minutes.
Stir in orange sections.
Combine orange sauce with chicken mixture.
Serve over rice.
Serves 6 to 8.
