Chicken Chow Mein
Chicken Chow Mein is an moderately easy dinner. Made with celery (medium size stalk), 6 medium to large onions, 2 c. bean sprouts, 4 oz. jar pimientos and 1 can sliced water chestnuts, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil stewing hen until well done.
Remove from broth and debone.
Cut into bite-size pieces.
Wash and separate celery stalk.
Cut diagonally 3/4-inch long.
Wash and cut up onions. Cut and drain bean sprouts, bamboo shoots and water chestnuts. Bring broth to a boil.
Add onions, bean sprouts, bamboo shoots and water chestnuts.
When vegetables are done, add chicken and pimientos.
Cook 3 to 4 minutes more.
Add enough water to dissolve cornstarch.
Add to pot and stir until slightly thickened.
Remove from heat and serve over egg noodles.
