Chicken and Okra Gumbo
Chicken And Okra Gumbo is an moderately easy dinner. Made with 1 large onion, chopped, 2 c. sliced okra (inch length), fresh or frozen, 4 tbsp. bacon drippings, 1 (2 1/2 lb.) chicken, cut up or you may use chicken breast of the same amount, cut up and salt and pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Saute onion and okra in the drippings about 30 minutes, stirring often.
Season chicken and pepper, brown chicken in additional oil or drippings in heavy skillet on low flame.
Pour off excess oil.
The okra, onion mixture and gradually stir in water.
Season with gumbo filet if desired. Cook over low heat until chicken is tender (about 45 minutes or more).
Remove bones from chicken, if desired.
Serve over hot cooked rice.
