California Rice and Chilies
California Rice And Chilies is an moderately easy dinner. Made with 4 c. cooked rice (not instant), 1/4 c. butter, 1 c. chopped onion, 2 c. sour cream and 1/2 to 1 (4 oz.) jar chopped green chilies (these may be hot, so use accordingly), this recipe delivers authentic, satisfying flavors. Cook rice.
Brown onion in butter until transparent.
Add cooked rice, sour cream, green chilies, salt and pepper.
Grease a large 2 1/2-quart casserole or baking dish and layer: one-half of rice mixture, 1/2 cottage cheese, 1/2 Cheddar cheese.
Repeat layers.
Bake at 375Β° for 30 to 40 minutes.
Can be made ahead and frozen.
