Butternut Squash Soup
Butternut Squash Soup is an moderately easy dinner. Made with 1 medium sized (1-1/2 lb.) butternut squash, cooked, peeled and cubed, 1 medium sized potato, cooked, peeled and cubed, 1 small onion, chopped, 2-3 cloves of garlic, minced and 2 c. chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Coat a large saucepan with cooking spray.
Saute garlic and onion until soft.
Add remaining ingredients, and bring to a boil.
Using a potato masher, mash squash and potato until soup is very thick.
Add more liquid as desired and simmer for 20 minutes.
If desired, add coarsely chopped turkey kielbasa sausage while simmering.
Remove bay leaf and serve.
