Blueberry Muffins
Blueberry Muffins is an moderately easy dinner. Made with 2 c. sifted flour, 3 tsp. baking powder, 1/2 tsp. salt, 1/4 c. sugar and 1 egg, well beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Sift flour, baking powder, salt and 1/4 cup of sugar together. Combine egg, milk and shortening.
Add all at once to flour mixture.
Stir until dry ingredients are moist, but still lumpy. Fold in blueberries.
Fill greased muffin pan 2/3 full.
Sprinkle with 1 tablespoon of sugar.
Bake in hot oven (400Β°) for about 25 minutes.
Makes 1 dozen.
