Put flours, sugar, baking powder, soda, cinnamon, and salt into a large bowl, stir to mix well and set aside.

Whisk together the buttermilk, egg and oil, stir into the flour mixture to form a smooth batter.

Place the griddle over a medium high heat until the griddle feels hot when you place your hand above it.

Lightly grease the griddle.
