Barbecued Baked Chicken
Barbecued Baked Chicken is an easy dinner. Made with 6 large green peppers, 2 or 3 large spanish onions, 2 chickens, quartered, 1 bottle open pit barbecue sauce and 1/4 c. wesson oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Clean peppers by hollowing out the seeds.
Keep peppers whole. Slice so you have rings of peppers.
Place on bottom of a large casserole pan.
Slice onions in rings.
Place on top of peppers. Place quarters of chicken on top of vegetables.
Add oil to bottle of Open Pit barbecue sauce.
Pour this over the top of the chicken. Cover with foil and bake at 350Β° for 1 to 1 1/2 hours.
