Parboiling
Place 1 side (or slab) of ribs, 1 medium quartered onion, 2 cloves, 1 bay leaf, 1 celery top, 1 teaspoon thyme and 1/4 teaspoon ground pepper in a large pot and barely cover with cold water.
Bring to a boil; reduce heat and simmer, covered, 40 to 45 minutes.
Drain and cool.
