Baked Potato Salad
Baked Potato Salad is an moderately easy dinner. Made with 6 c. sliced boiled potatoes (red are best), pared, 1 c. diced bacon, 1 c. chopped onion, 1 c. chopped celery and 3 tbsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Fry bacon.
Add onion and celery; saute until translucent. Add the flour, pepper and salt; cook for 3 to 4 minutes.
Add water, vinegar, sugar, celery seed and parsley.
Cook until sugar is dissolved and mixture is thickened.
Place potatoes in 9 x 13-inch or flat casserole pan.
Pour hot mixture over potatoes; ease through entire dish.
Bake for 45 minutes at 375Β°.
