Baked Eggplant Parmesiana
Baked Eggplant Parmesiana is an moderately easy dinner you can prepare in just 46 minutes. Dip each slice of eggplant into well beaten egg and into seasoned bread crumbs.
Fry breaded eggplant slices in medium to hot oil in frying pan, 2 minutes on each side.
Drain cooked eggplant slices on paper towels.
Layer in glass baking dish some of your favorite tomato sauce, then all of the cooked eggplant. Top with more sauce and finish by topping with some grated Mozzarella cheese and dried oregano.
