Baked Eggplant

Peel eggplant; salted water several hours or overnight.
Crumbs in evaporated milk, plus whole milk.
Saute pepper, onions and celery in butter until tender. Boil eggplant until tender.
Mix all together, except cheese; blend well.
Greased casserole; with cheese. Bake at 350Β° until brown.
