B.L.T. Soup
B.L.T. Soup is an moderately easy dinner. Made with 1 lb. bacon, cut into 1/2-inch pieces, 1/4 c. chopped celery, 1/4 c. chopped onions, 1 medium-size tomato, finely diced and 1 (8 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. Saute bacon in medium-size saucepan until lightly browned.
Add celery and onion.
Saute until onion is transparent.
Drain off all excess fat.
Place vegetables and bacon in large pot.
Add tomato, tomato sauce, water, salt and pepper.
Bring to a boil.
Stir in cornstarch mixture.
Cook, while stirring, until bubbly and thickened.
Add lettuce.
Reduce heat and simmer 5 minutes. Crackers can be added to increase crunchiness.
