Preheat oven to 425Β°.
Lightly oil or spray 12 muffin cups with nonstick cooking spray.
In a bowl, whisk together oats, milk, sugar, corn syrup, oil and egg white.
In another bowl, mix flours, baking powder, cinnamon, baking soda, salt and nutmeg. Stir apples into flour mixture until evenly distributed.
Stir milk mixture into flour mixture, just until moistened.
Spoon batter into muffin cups.
Bake 15 to 20 minutes or until golden brown.
Makes 12 muffins.
