Apple Harvest Cake
Apple Harvest Cake is an moderately easy dinner. Made with 2 tsp. unsalted butter, 1 1/3 lb. granny smith apples, cored, peeled and sliced 1/4 inch thick, 1 c. walnuts, coarsely chopped, 1 1/2 c. sugar and 2 c. flour, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Lightly grease the bottom and sides of a 13 x 9 x 2-inch cake pan with the butter.
Line bottom with baker's parchment or brown bag paper.
Set aside.
Toss the apples with the nuts and sugar in a large bowl.
In another bowl, combine flour, cinnamon, soda and salt.
Beat in eggs, oil and vanilla until batter is thoroughly moistened.
Pour the batter over the apples.
Stir with a wooden spoon to evenly distribute the fruit (do not overmix).
Pour into pan.
Bake 45 to 50 minutes, or until cake tester is clean.
Just before serving, sprinkle with confectioners sugar.
Store at room temperature.
