Gently mix together eggs, oil and brown sugar.
Combine flour, salt and baking soda.
Stir gently together the egg mixture, flour mixture, zucchini, vanilla and nuts.
Spoon into well-greased muffin pans (or cupcake liners).

Do not overbake.
Remove from pans to cool.
