Zesty Zucchini Casserole
Zesty Zucchini Casserole is an moderately easy dinner. Made with 6 c. thinly sliced zucchini, 1/4 c. chopped onion, 1 c. cream of chicken soup, 1 c. shredded carrots, uncooked and 1 pkg. stove top stuffing, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook zucchini and onion in boiling water for 5 minutes; drain. Combine soup and sour cream. Stir in zucchini, onion and carrots. In separate bowl combine stuffing mix and butter. Spread half of stuffing mix in 9 x 13-inch pan.
Spoon vegetable mixture over top, then layer of cheese.
Sprinkle remaining stuffing mix on top.
Bake at 350Β° for 30 minutes.
