Wild Rice Soup
Wild Rice Soup is an moderately easy dinner. Made with 3 c. cooked rice (1 c. wild, 1 c. brown and 1 c. white), large onion, finely chopped, 1 carrot, shredded or diced, 2 ribs celery, chopped and 1 stick butter, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onion, carrot and celery in the butter.
Add flour to thicken, then add chicken broth.
Next, add rice; mix.
Lastly add cream; do not boil.
Cook slowly for up to 2 hours.
A crock-pot works well on low heat for the 2 hour cooking.
