Wild Bill's Pinto Bean Chili
Wild Bill'S Pinto Bean Chili is an moderately easy dinner. Made with 2 lb. dried pinto beans, 2 medium tomatoes, chopped or 16 oz. can chopped tomatoes, 1/3 c. chili powder, 3 large cloves garlic, minced and 1 large red onion, chopped fine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Place beans in a large heavy saucepan or Dutch oven and cover with water and bring to a boil.
Turn heat down and simmer for 15 minutes.
Drain.
Return beans to the pan and cover with water by 2 inches.
Add all the remaining ingredients except the meat and salt.
Bring mixture back to a boil.
After the beans have reached boiling, turn the heat down to simmer.
Saute meat until browned. Add to the bean mixture.
Cook until the beans are soft, stirring occasionally and making sure that the beans have enough water and do not dry out.
Cook about 3 to 4 hours.
Uncover if the beans get too soupy.
Add salt to taste.
Garnish with shredded Jack or Cheddar cheese and cilantro.
Serve with fresh flour tortillas and your favorite salsa.
