Turkey-Vegetable Chili
Turkey-Vegetable Chili is an impressive dinner. Made with 1 tbsp. plus 1 tsp. olive oil, 15 oz. ground turkey, 1 1/2 c. chopped onion, 1 c. chopped bell pepper and 2 tbsp. chili powder, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Warm 2 teaspoons oil until hot, but not smoking.
Add the turkey and brown.
Put turkey aside and drain.
Add remaining 2 teaspoons oil to pan and saute onions and bell pepper until golden (3 to 5 minutes).
Stir in chili powder, garlic and cumin.
Cook, stirring, for 1/2 to 1 minute.
Add the next 5 ingredients.
Add turkey and bring to a boil.
Reduce heat to low, cover and simmer for 20 minutes, stirring occasionally.
Add the kidney beans and corn.
Cook about 5 minutes until last ingredients are heated through.
Serves 4.
