Turkey Spinach Enchilada Casserole
Turkey Spinach Enchilada Casserole is an impressive dinner. Made with 1 lb. ground turkey, 2 tbsp. minced onion, 1/2 pkg. taco seasoning, 1 qt. tomatoes, drained and 1 pkg. frozen spinach, thawed and squeezed, this recipe delivers authentic, satisfying flavors. Prepare ahead.
Cook meat and onion in skillet; drain.
Stir in tomatoes, spinach and taco seasoning.
In bowl, combine soup, sour cream, milk and garlic powder.
Arrange 6 tortillas in 9 x 13-inch dish (cut to fit).
Spoon in meat mixture.
Spread chilies and 1 1/2 cups cheese over meat.
Cover with 6 tortillas, add soup mixture and smooth over.
Cover with plastic wrap.
Refrigerate overnight.
Sprinkle casserole with 1/2 cup cheese.
Bake at 325Β° for 1 hour.
Serve with sour cream and hot sauce.
If ground beef is substituted, substitute cream of golden mushroom soup.
