Tortilla Soup
Tortilla Soup is an moderately easy dinner. Made with 2 chopped carrots, 2 chopped celery sticks, 1 pkg. corn tortillas, 3 c. cooked, shredded beef and 2 cans chicken broth, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large pot of hot water, boil together the carrots, potatoes and celery for 10 minutes; drain and add beef, chicken and chicken broth.
Simmer for 5 minutes.
Cut tortillas in strips.
Cook corn tortillas in Crisco oil until crispy.
Dab with paper towel and remove grease.
Top each serving with Mozzarella, tomato and tortillas.
