(I use a large plastic container.)

Put starter in refrigerator.

Stir once a day.

Starter will be ready to use in 2 days . Remove from refrigerator.

Let stand at room temperature at least 1 hour.

Stir starter well and measure amount of starter needed for recipe.

Replenish remaining starter with starter food and return to refrigerator.

Use starter 2 to 14 days, stirring daily.

If not used within 14 days, pour off or give away 1 cup . Feed remaining part as if you had used it.
