Spiced Fruit Salad
Spiced Fruit Salad is an moderately easy salad you can prepare in about 1 hour 24 minutes. Made with c. canned pineapple chunks (reserve 1/3 c. juice), cinnamon stick, . rum extract, c. sliced fresh strawberries and c. canned sliced peaches, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In saucepan over medium heat, heat pineapple juice and cinnamon stick to boiling.
Reduce heat.
Cover and cook about 5 minutes. Remove cinnamon stick.
Add rum extract.
In medium bowl, mix strawberries, peaches, cantaloupe and pineapple.
Pour pineapple juice over fruit and toss.
Refrigerate.
Makes 4 (1/2 cup) servings.
