Southwest White Chili
Southwest White Chili is an impressive dinner. Made with 1 tbsp. olive oil, 1 lb. boneless, skinless chicken breast, cut into cubes, 1/4 c. chopped onion, 1 c. chicken broth and 1 (4 oz.) can chopped green chilies, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat oil in 2 to 3-quart saucepan over medium-high heat.
Add chicken and cook 4 to 5 minutes, stirring often.
Remove chicken with slotted spoon; cover and keep warm.
Add onion to saucepan and cook 2 minutes.
Stir in next 7 ingredients and simmer 30 minutes.
Stir in cooked chicken and beans.
Simmer 10 minutes. Garnish with cheese and onions.
