South Texas Chicken Casserole
South Texas Chicken Casserole is an moderately easy dinner. Made with 1 large bag tortilla chips, 1 can cream of chicken soup, 1 can cream of celery soup, 1 can ro-tel tomatoes and 1 small pkg. velveeta mexican cheese, cubed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Remove from bones and cut into bite size pieces.
Mix soups, tomatoes and Velveeta in bowl.
Heat in microwave until Velveeta is melted.
Add salt, pepper and chicken.
Crush enough tortilla chips to cover bottom of casserole.
Pour 1/2 of chicken mixture over chips.
Add more crushed chips over chicken.
Pour remainder of chicken over 2nd layer of chips.
Top with more chips.
Sprinkle shredded Cheddar over top.
Bake at 325Β° for 45 to 55 minutes or until Cheddar is melted.
Top with chopped green onions and a spoon of sour cream.
