Slow Cooker Enchiladas
Slow Cooker Enchiladas is an impressive slow-cooker meal. Made with 1 lb. ground beef, 1 c. chopped onion, 1/2 c. chopped green pepper, 1 16 oz. can kidney beans and 1 15 oz. can black beans, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Brown beef, onion and green pepper.
Drain, add the following 8 ingredients and bring to a boil.
Reduce heat and simmer for 10 minutes.
Combine cheeses.
Alternate ground beef mixture, cheese, and tortilla, starting with 3/4 c. of beef in bottom of slow cooker.
Cook 5 to 7 hours on low.
