Shrimp, Crab, Oyster and Sausage Gumbo
Shrimp, Crab, Oyster And Sausage Gumbo is an impressive dinner. Made with 12 oz. butter, 12 oz. oil, 24 oz. flour, 1/2 lb. chopped bell pepper and 1/2 lb. celery, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oil and butter to smoke.
Add flour; stir to dark red brown.
Add vegetables and garlic.
Add tomato purée; cook for 10 minutes.
Add water and seasonings; simmer for 45 minutes to 1 hour.
Chop sausage; saute in large pan.
When brown, pour off grease.
Add shrimp.
When they turn pink, add green onions and parsley.
Now, add this to the big pot that has been simmering. Add crabmeat and oyster water.
Adjust seasoning.
Add oysters to the hot Gumbo at the last minute.
Serve over hot, boiled rice. Makes 2 gallons.
