Short Cut Chili Sauce
Short Cut Chili Sauce is an moderately easy dinner. Made with 3 qt. peeled and chopped tomatoes, 3 c. chopped celery, 1 c. chopped green pepper, 2 c. sugar and 1 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine tomatoes, celery, onion, green pepper and salt.
Let stand overnight.
Drain in colander; do not press vegetables. Place vegetable mixture in kettle.
Add sugar, brown sugar, pepper, mixed spices (in a cloth) and vinegar.
Bring to boil. Reduce heat and simmer, uncovered, for 15 minutes.
Put in jars and seal.
Process in boiling water for 10 minutes.
Makes 5 1/2 pints.
