Sesame Cucumber Salad
Sesame Cucumber Salad is an moderately easy dinner. Made with 1 medium cucumber, 2 stalks green onions, 1/4 round onion, 1 to 2 cloves garlic and 1 tbsp. soy sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Peel cucumber, discard seeds, cut lengthwise in quarters and then dice to about 1/2-inch pieces.
Salt and let stand 5 to 30 minutes.
Drain the juices.
Chop green onions in 1/2-inch lengths. Dice onions and chop garlic (fine).
Mix all ingredients together and let stand at least 30 minutes before eating.
