Seafood Jambalaya
Seafood Jambalaya is an moderately easy dinner. Made with 3 lb. shrimp, peeled and deveined, 1 lb. crab meat, 1 doz. oysters, 1 lb. smoked sausage, sliced and 3 c. rice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Boil rice and set aside.
Saute onion over low heat in oil until almost brown.
Add shrimp and cook 15 minutes, stirring occasionally.
Add parsley, shallots and bell pepper.
Saute 10 minutes, stirring.
Add smoked sausage and cook 10 minutes.
Add 3 cups water and cook 1/2 hour over medium heat.
Add onions and crab meat; cook 15 minutes.
Salt and pepper to taste.
Add rice a little at a time, stirring steadily until all rice is in.
Heat over medium heat for 15 minutes, stirring occasionally.
Serves 6 to 8.
