Heat 4-inches of oil at 350° in a saucepan.
Crumble sausage into large skillet; add onion.
Cook over medium heat until browned, stirring occasionally.
Remove from heat; drain drippings.
Stir in next 4 ingredients.
Mix until cheeses melt.
Lightly dampen 1 wrapper by dipping your finger in water and wiping all the edges, making 1/4-inch border around the square.
Keep wonton wrappers from drying; cover remaining with a damp towel.
