Richard's Japanese Fried Rice
Richard'S Japanese Fried Rice is an easy dinner. Made with 1 c. rice, cooked 20 to 25 minutes, 4 eggs, scrambled and broken up into pieces, 2 bunches green onions, chopped (including greens) and 1/2 lb. bacon, fried semi-crisp, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Fry bacon semi-crisp; keep grease.
In a large skillet, combine rice, bacon and egg pieces.
Stir-fry on high heat for 2 minutes.
Add green onions and stems.
Stir-fry for 1 minute. (Use the bacon grease that was left in the skillet for frying.) Serve hot.
