Regal Chicken Salad
Regal Chicken Salad is an moderately easy dinner. Made with 4 c. diced cooked chicken, 1 (20 oz.) can pineapple chunks, drained, save juice, 2 c. seedless green grapes, 1 c. chopped celery and 2/3 c. coarsely chopped dry salted peanuts, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine chicken, drained pineapple, grapes, celery and peanuts.
Stir in tarragon.
Combine mayonnaise, lemon juice and 2 tablespoons pineapple juice.
Gently fold into chicken mixture. Serve on lettuce with parsley or small celery leaves as a garnish. Serves 8.
