Rafferty's Potato Soup
Rafferty'S Potato Soup is an moderately easy dinner. Made with 10 to 12 medium potatoes, peeled and diced, 1/2 to 3/4 stick butter, 1 c. cream of mushroom soup, 1 c. celery soup and 1 large finely chopped onion, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large saucepan, cook potatoes and onion in enough water to cover on medium heat until tender.
Add cubes of cream cheese.
Remove from heat and stir until cheese is melted.
Add soups, butter and spices.
Top with shredded cheese, bacon bits or green onion.
