Pumpkin Soup
Pumpkin Soup is an impressive soup you can prepare in about 1 hour 12 minutes. Made with c. butter or margarine, melted, large sliced onion, c. chopped green onions, (16 oz.) pumpkin and c. chicken stock (bouillon is okay), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Add onion and green onion to margarine, cook until soft.
Stir in pumpkin, chicken stock, bay leaf, sugar, curry powder, nutmeg and parsley.
Cook 15 minutes, uncovered.
PurΓ©e in blender.
Add milk and salt gradually, mix and simmer 10 minutes.
Garnish with chopped green peppers or a drop of sour cream or paprika.
