Potato Soup
Potato Soup is an moderately easy dinner. Made with 4 to 6 tbsp. oil, 9 medium potatoes, skins on or off, 2 small onions, salt and pepper to taste and 1 tbsp. parsley, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In a large pan heat oil.
Dice onions and add to hot oil, cook until clear.
Cut potatoes into bite-size pieces.
Add potatoes slowly to oil, browning them.
After all the potatoes are browned, add tomato sauce, parsley, salt and pepper.
Bring to the boil then reduce heat and simmer until potatoes are soft.
Add cheese and simmer another 15 minutes.
Good served with bread and butter.
Freezes well.
