Potato Soup
Potato Soup is an moderately easy dinner. Made with 1 yellow onion, chopped, 1 tbsp. olive oil, 1 1/2 c. water, 2 c. cubed potatoes and 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute the onion in a small amount of olive oil.
Cook the potatoes in 1 1/2 c. of water.
Add the onions to the potatoes (and water), and cook until potatoes are tender but not falling apart.
Lower the heat and add sour cream and chicken soup. Gradually add the milk, salt and pepper while stirring constantly. Heat the mixture but do not boil.
