Potato Soup
Potato Soup is an moderately easy dinner. Made with 3 c. minced leeks and onions, 4 c. cubed potatoes, 4 c. chicken broth, 3 tbsp. butter and 3 tbsp. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute leeks and onions in butter.
Add flour, then potatoes, broth and salt.
Simmer until potatoes are cooked (may be mashed a little).
Add sour cream when ready to serve.
Spinach should be added after soup is done and before sour cream is added.
