Potato Leek Soup
Potato Leek Soup is an moderately easy soup you can prepare in about 1 hour. Made with or 3 leeks, medium potatoes, butter or margarine, or 3 cloves garlic, crushed and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Use white part of leeks, clean and chop with garlic in blender or food processor.
Saute in butter or margarine until leeks are softened.
Add peeled, diced potatoes to leeks and garlic; mix to blend together.
Add water to cover ingredients and cook until leeks and potatoes are tender.
Add salt, pepper and dill.
If you care to, you can add milk, sweet cream or evaporated milk.
